The Causses plateaux around Millau

Description

These steep slopes form the border between the causses and the pre-causses. This land unsuitable for cultivation, often forested, harbours a wealth of marine fossils. Springs are common here, where impermeable rock strata meet permeable limestone. Cellars have been created from the caves and fallen rock. The most famous are, without question, the natural cellars in Roquefort, but there are many others in other villages with cellars.
